Grilling Tips and TechniquesMarinades and More
You can marinate the meat for several hours or even overnight. Marinades allow you to infuse the meat with all kinds of interesting flavors, from cuisines all over the world. Marinades can also serve to tenderize meat. Another option is to rub the meat with a spice mix before you put it on the grill. Rubs don’t have to be on the meat as long as marinades do, because the job of the rub is to form a savory crust when it interacts with the flame and heat of the grill. Grocery stores now stock an amazing variety of spice rubs and marinades for the backyard chef to try. But it’s even more fun to buy individual spices and mix up your own dry rub concoction. Marinades can be quick and easy to prepare yourself as well, and you may save money. Specialty spice stores on the Internet offer great prices and fast delivery. Fresh or dried herbs add wonderful flavor to outdoor cooking; some are very strong like rosemary and cilantro, others more subtle such as parsley. Outdoor chefs should have their pantry stocked with dried a variety of dried herbs. Another option is to grow your own herbs and pick them fresh right before you begin cooking. You can’t get much more "gourmet" than that!
