Grocery stores now stock an amazing variety of spice rubs and marinades for the backyard chef to try. But it’s even more fun to buy individual spices and mix up your own dry rub concoction. Fresh or dried herbs add wonderful flavor to outdoor cooking; some are very strong like rosemary and cilantro, others more subtle such as parsley. Outdoor chefs should have their pantry stocked with dried a variety of dried herbs. Another option is to grow your own herbs and pick them fresh right before you begin cooking. You can’t get much more “gourmet” than that!
